Vanilla Blueberry Cake

Zutaten

  • 2 1/2 (280g) Cup   all purpose flour
  • 1 Tsp baking powder
  • 1 Tsp soda powder
  • 3/4 (150g) Cup cane sugar
  • 1 tsp lemon zest
  • 1/2 (120ml) cup plant oil
  • 1 (230ml) cup plant milk
  • 1 tsp apple cider vinegar
  • 1/2 tsp vanilla powder
  • salt
  • 130 g blueberries
  • 5 g starch for the berries

Anleitungen

  • Preheat oven to 180° and line an 8 inch loaf pan with parchment paper.
  • In a bowl combine milk and applecider vinegar, stir, let sit 5 min.
  • In a bowl, whisk oil with sugar until light and fluffy. Add vanilla and milk. Whisk until combined.
  • In a second bowl, combine flour, baking powder, salt, stir. Then add it to the wet ingredients. 
  • Whisk until everything is combined and a smooth batter but don't overmix.
  • Next, add the blueberries and stir with a spatula.
  • Pour batter into pan, bake for 45-50 min or until a toothpick comes out residue-free.
  • Remove from the oven and let it cool completely.
  • Decorate and enjoy.
