Rhubarb cake

Zutaten

Topping

  • 3-4 Rhubarb sticks

  • 3 Tbsp fruit spread

  • 150 g cream cheese ( opt.vegan )
  • 150 g vanilla jogurt ( opt.vegan )
  • 1/2 Pkg Vanilla pudding powder
  • 1/2 tsp Vanilla powder or essence

Tarte base

  • 200 g flour
  • 66 g nuts ( almonds )
  • 66 g brown sugar
  • 120 g v butter
  • 2-3 Tbsp water
  • 1 tsp flaxseeds
  • 1 tsp cinnamon or more

Anleitungen

  • Topping:
  • First, cut the rhubarb into pieces. You can try the geometric pattern.
  • Tart base :
  • Mix the nuts, flour, sugar, salt and spices in a large bowl.
  • Cut the cold margarine into pieces and knead into the dry ingredients with your hands.
  • Pour cold water into the bowl and form a ball of dough. Wrap the dough in cling film and leave to rest in the fridge for half an hour.
  • While the dough is in the fridge, you can grease the cake tin with a little margarine.
  • Preheat the oven to 180C top/bottom heat.
  • Pour the dough into a tart tin.

  • The filling can now be spread over the tart.
  • First the fruit spread.
  • now the vegan quark spread.
  • The tart now just needs to be topped with the rhubarb pieces and can then be baked in the oven for approx. 35-45 minutes.
  • The tart tastes best the next day and sprinkled with powdered sugar.
  • If you like it sweeter, you can also add sugar to the filling.
