pear nut cake with figs

Kochutensilien

  • 1 Banking thin 26cm

Zutaten

  • 150 g v butter in pieces a little more for greasing
  • 200 g spelt flour
  • 200 g grated nuts
  • 100 g grated pistachios
  • ½ tsp cinnamon
  • 2 tsp baking powder
  • 2 tsp vanilla sugar
  • 2 linseed eggs 2 tbsp linseed flour with 6 tbsp water
  • 150 - 200 g honey or rice syrup
  • 150 g milk of your choice
  • ½ tsp apple cider vinegar
  • 300 - 350 g pears peeled, cored, in pieces (2 cm)
  • 50 g raisins optional
  • 1 tbsp raw cane sugar
  • 1 tbsp powdered sugar
  • 4 organic figs sliced

Anleitungen

  • Preheat the oven to 180°C (top and bottom heat) and grease and flour a springform pan (Ø 26 cm) with butter.
  • First make the fax seed eggs, mix 2 Tbsp flaxseed powder with 6 Tbsp water and set aside
  • Then mix the v milk with the apple vinegar
  • Mix the spelt flour, nuts, cinnamon, baking powder and vanilla sugar in a bowl and set aside.
  • Add the linseed eggs, honey, butter, milk and spices.
  • Finally, carefully fold in the pears, raisins and pistachios. Pour the mixture into the cake tin, smooth out and top with sliced figs.
  • Then bake for approx. 40-45 minutes (180°C).
  • Leave the pear cake to cool, sprinkle with powdered sugar, cut into pieces and serve.
