Zutaten

Lemon Curd

  • 70 ml organic Lemon Juice
  • 50 ml plant drink
  • 70 g Granulated Sugar
  • 9 g Corn Starch
  • 10 ml Whipping Cream ( optional vegan ) mixed with corn starch non dairy cream or any cream of your choice
  • 10 g Butter of your choice soft
  • Turmeric powder or yellow food coloring optional

Cookies

  • 200 g All Purpose flour
  • 100 g Granulated Sugar
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 50 g Plant yogurt
  • 30 g Milk of your choice room temp
  • 65 g Butter of your choice melted ( vegan butter sticks or any butter of your choice)
  • 3 tsp Lemon juice fresh
  • Zest of 1 organic lemon
  • 1/2 tsp Vanilla Powder
  • Powdered Sugar for rolling the cookies before baking
  • Turmeric powder or Yellow food coloring optional

Lemona Curd

  • Method:-In a pot combine lemon juice, milk & sugar, when it comes to simmer; add corn starch and bring it to boil.
  • Stir the lemon curd as it comes to a boil. Boil for 1-2 minutes
  • Transfer into a clean bowl and add butter, mix until the lemon curd is smooth.
  • Cover the surface of lemon curd with plastic wrap.
  • Chill it for 1 hour and whisk the lemon curd to smooth consistency. Use it as a filling for the cookies

Cookies

  • Preheat the oven to 350f. Line a baking tray with baking paper. In a medium sized bowl, combine all of the dry ingredients.
  • In a bowl combine sugar and lemon zest, and use your fingertips to rub the zest into the sugar.add the melted butter,milk, yogurt lemon juice, vanilla and yellow food coloring and whisk well until combined.
  • Add the liquid ingredients into the dry ingredients and fold until fully combined and smooth dough is formed..
  • Use 2 tablespoons cookie scoop to portion all of the cookie dough and roll them into the powdered sugar.
  • Arrange the cookie dough evenly spaced at least 2 inch apart on the baking tray.
  • Make an indent in the middle of the cookie dough by pressing it halfway.
  • Fill the indent with 1tsp of lemon curd and bake for 8-9 minutes.
  • Cool completely on a wire rack before serving.
