Heat the water, lemon juice and agartine in a small saucepan, stirring constantly for about 2 minutes.

Whip the cream until stiff, add the cream stiffener and carefully fold it into the cream cheese.
Pour the cream into small glasses, smooth it out, tap it a little on the work surface and allow it to set in the refrigerator for at least 4 hours. Before serving, top it with pureed strawberries.
