Braided Poppyseed Bun

Zutaten

Dough

  • 500 g flour
  • 250 ml plantmilk I used almond-milk.
  • 50 g cane sugar
  • 75 g vegan butter
  • 25 g fresh yeast

Filling

  • 200 g poppyseeds
  • 50 g sugar
  • 200 ml plantmilk

Glaze

  • 100 ml water
  • 100 g cane sugar

Anleitungen

Dough

  • Heat the plantmilk cerafully for about 30 seconds until it is lukewarm.
  • While the milk is in the microwave you can mix the flour and the sugar in a big bowl.
  • Mix one tablespoon of sugar into the milk and dissolve the fresh yeast in it.
  • Pour the milk into the bowl with flour but don´t mix it yet.
  • Cover the bowl with a kitchentowel and let it rest in a warm space for 10 minutes.
  • The milk should be frothy now. You can start to mix it.
  • Melt the butter and pour it into the dough. Kneed the dough until it is soft. It shouldn´t be sticking to the sides of the bowl anymore.
  • Cover the Bowl with a kitchen towel and let it rest in a warm space for an hour.
  • Preheat the oven to 175C.

Filling

  • In the meantime you can prepare the filling. mix the sugar and the poppy seeds.
  • Bring the plantmilk to a boil and mix in the dry ingredients.
  • Let the filling cook for 5 minutes. When it´s done, let it cool down.
  • Spread the dough on a large working are that´s covered with flour.
  • Spread the filling on top of the dough carefully and roll it up.
  • Take a sharp knive and split the doughroll down its length into 3 strands.
  • Form a braid out of the 3 strands and put it into a square-shaped baking form. It should be lined with parchmentpaper.
  • Bake the braid in the oven for about 30 minutes.

Glaze

  • While the braid is in. the oven you can work on the glaze.
  • Put the sugar and the water into a cooking pan and let it simmer for 10 minutes. It should form a sticky golden-brown sirup.
  • Brush the sirup over the braid when its done.
