Almond cake with nectarines and peaches

Zutaten

cake base:

  • 150 g ground almonds
  • 150 g wholemeal spelt flour
  • 2 tsp baking powder
  • 100 g sugar
  • 1/2 tsp salt
  • 1/4 tsp vanilla powder
  • 1/4 tsp cinnamon
  • 180 g apple puree
  • 90 g plant oil

topping:

  • 200 g fruit of your choice
  • 2 tbsp cane sugar
  • 50 g flaked almonds
  • powdered sugar

Anleitungen

  • Preheat the oven to 180 °C top/bottom heat.
  • Wash and clean the nectarines and cut them into pieces.
  • Mix almonds, flour, baking powder, sugar, cinnamon, salt and vanilla in a bowl. Quickly stir in apple puree and vegetable oil until a homogeneous dough is formed.
  • Pour into the prepared mold and smooth out.
  • Press the nectarine pieces into the dough, sprinkle with 1-2 tablespoons of sugar and the flaked almonds.
  • Bake in the preheated oven for 30-35 minutes.
  • Test the cake for doneness with a chopstick.
  • Remove the cake from the oven and let it cool on a cooling rack.
  • Then let it cool completely.
  • Dust with a little powdered sugar before serving.
  • Instead of ground almonds, you can also bake the cake with other ground nuts, such as hazelnuts or walnuts. By the way, freshly ground nuts always taste best.
